examples: tests: adapt udp shell commands for new forwarding engine
...
The NIB's forwarding engine behaves more correctly than GNRC's old
forwarding engine in that link-local addresses require also an
interface to be provided to be meaningful. As with other commands this
is simplified for the special case that there only is one interface
that that interface is chosen.

examples: only whitelist a few essential boards (dirty hack)

This is a dirty hack proposed by @kaspar030 offline (with slight
adaptations) to allow Murdock to build properly tonight. @kaspar030
revert if the issue is fixed, @miri64 close this one if it isn't merged
tonight.
Right now Murdock fails randomly for some boards, because it doesn't has
the `xxd` tool installed.

Fixes broken default configuration on boards which are not using UART0

When receiving a response to a request send our earlier, it is in
some cases essential, to know something about who send the reponse.
This is needed for example when sending requests to multicast
addresses to be able to react to different incoming responses.
