examples: only whitelist a few essential boards (dirty hack)

This is a dirty hack proposed by @kaspar030 offline (with slight
adaptations) to allow Murdock to build properly tonight. @kaspar030
revert if the issue is fixed, @miri64 close this one if it isn't merged
tonight.
Right now Murdock fails randomly for some boards, because it doesn't has
the `xxd` tool installed.

If ETHOS_UART is not defined, then the default behaviour is to fall back
to UART_STDIO_DEV.
Fixes broken default configuration on boards which are not using UART0
for STDIO (e.g. Mulle)

net/gcoap: added remote sock ep to resp handler cb
...
When receiving a response to a request send our earlier, it is in
some cases essential, to know something about who send the reponse.
This is needed for example when sending requests to multicast
addresses to be able to react to different incoming responses.
